I thought I would post my normal Breakfast sandwich I eat pretty much everyday. Don’t laugh to hard at the plate I used. It was my 4 year old daughters from a recent trip to Mexico.

First off…I’ve always loved McDonald’s Egg McMuffins, but I didn’t like all the Fat and white bread that came along with it. So I made up my own version that’s packed with everything my body needs to “Eat Clean and Stay Lean”.

The funny thing about this sandwich is…it’s Bigger, but less calories. Plus…I think it tastes Better!

 Here’s the recipe.

2 Tbs liquid egg whites

1 Tbs liquid egg yolks

1/4 cup chopped broccoli

1/4 cup chopped onions

1/4 cup chopped peppers (not always)

1- Wheat sandwich thin bread (100 calories)

2 – Slices tomatoes

2 – Slices turkey bacon

Only 325 Calories

Sometimes I’ll add a piece if light cheese to give a little more flavor. But…I use the weight watchers low fat mozzarella. It’s about 40 calories.

Feel free to make changes and experiment until you find your taste. I LOVE This Sandwich and I never get sick of it 🙂

  1. This looks like a great rpeice! I love making huge batches of tofu scrambles, some TVP breakfast sausage, and then making a ton of breakfast burritos for the freezer.Makes eating breakfast on workdays so much easier!
